Tasty Tuesday: Peach Cobbler

We go to my parents' house for dinner every Friday night. After the kitchen is cleaned up, and the dishes are washed and put away, the 4 of us adults play a game while the kids destroy play in the family room. We've been enjoying this tradition for 4 years. We are so blessed to live near my parents and call them our best friends.

The other day, my mom made peach cobbler for dessert during our game. She ended up with more than enough peaches and sent them home with me to make the cobbler again.

What? You want me to take home peeled and sliced peaches ready to toss in a cobbler? Oh, if I must.

This recipe really couldn't be any simpler.

Well, it could. It could call for canned peaches. But really, who would want to compromise the flavor of fresh peaches for canned?

Besides, I already had someone do the dirty work for me. Thanks, Mom!

This isn't the "absolutely best cobbler in the entire world," but it's simple and quick. And yummy.

And sometimes that's all that matters.

Peach Cobbler
Ingredients:
1/2 cup (1 stick) butter                               1 cup whole milk
1 all-purpose flour                                      1 cup sugar
1 1/2 teaspoons baking powder                 3 cups sliced peeled peaches
1/2 teaspoon salt

Directions:
1. Preheat the oven to 350 degrees F. Place butter in 13 by 9-inch baking dish. Place dish in oven to melt butter.
2. Mix flour, baking powder, and salt in large bowl. Stir in milk and sugar to form batter.
3. Using oven mitts, remove hot baking dish from oven. Pour batter into baking dish. Spoon peaches and any peach juices evenly over batter.
4. Bake until batter rises and browns on top, about 30 minutes.
